Old Country Buffet Eggs Casserole?
I went to the old country buffet a few months ago. They have this egg casserole with broccoli and cheese that I loved. I have tried to replicate this to no avail. Just an FYI there is no rice or stuffing in it. It does have a slight bread like quality to it, but not like bread pudding or bisquick. Please don't respond if your recipe has rice, stuffing mix or bisquick in it.
Most likely a Fritata you are looking for.
Broccoli & Cheese Fritatta
1/2 tsp oil
1 1/2 cup egg beaters(r) 99% egg substitute
1 tbl minced fresh basil OR 1/2 teaspoon dried
1/2 tsp reduced-sodium soy sauce
1/2 cup diced cooked red-skinned potatoes see preliminaries
1 cup cooked broccoli florets see preliminaries
1/4 cup sliced pimiento
1 tbl minced green onions
1/3 cup grated lowfat cheddar cheese
1 pch ground black pepper
To cook the broccoli and potatoes, steam them until just tender when pierced with a sharp knife or skewer, about 5 minutes. If the broccoli is ready first, remove it with tongs and cook the potatoes a few minutes longer.
Heat oil in a large non-stick frying pan with a heatproof handle over medium heat.
In a large bowl, whisk together the egg substitute, basil and soy sauce. Add to the heated pan. As the eggs cook, gently push the outer edges toward the center with a spatula until eggs are about half set. Do not stir.
Sprinkle with potatoes, broccoli, pimentos and green onions.
Place pan under broiler, 5-6 inches from heat. Broil 2-3 minutes.
Sprinkle with the cheese and broil 2 minutes more, or until the cheese is melted. Sprinkle with pepper. Slice into wedges; serve immediately.
Or;
3/4 lb broccoli florets, (about 2 cups)
1 tbl olive oil
1/2 cup finely chopped onion
1/2 cup chopped red bell pepper
1 cup feta cheese, crumbled (4-oz.)
1/3 cup wheat germ
1/2 tsp paprika
6 lrg eggs
You may serve this vegetable-rich main dish just out of the oven, or bake it ahead and serve at room temperature.
Preheat oven to 325 degrees. Grease 12-inch quiche dish or round cake pan.
Steam broccoli until crisp-tender; remove from heat and set aside to cool.
Meanwhile, in medium skillet, heat oil over medium-high heat. Add onion and bell pepper and cook, stirring often, until vegetables are soft, about 5 minutes. Remove from heat.
When broccoli is cool enough to handle, cut into small pieces. In medium bowl, combine broccoli, sauted onion and pepper, cheese, wheat germ and paprika; stir briefly to mix. In separate bowl, beat eggs to blend yolks and whites.
Stir eggs into vegetable mixture, then pour egg mixture into prepared dish.
Bake until eggs are set, about 30 minutes. Remove from oven and serve warm, or let cool and serve at room temperature. To serve, cut into wedges.
6 -8 bread slices
10 beaten eggs
3 C milk
s/p
dash hot sauce
2C cheese shredded
broccoli cut up pieces
line a 13x9 pan with the bread, mix eggs, milk, seasoning, pour over bread add broccoli and top w. cheese let sit over night
bake 350 45 min-1 hr or until center is raised too and set
May not be what you are looking for but it is good. And it serves a crowd and a half!
I need a recipe for an cheesy egg casserole, kind of like at Old Country Buffet.?
At Old country Buffet, on the weekends in the morning, they serve this incredible thick and delicious Cheesy egg casserole. It's the thickness of a lasagna, but I don't know how to make one.
Anyone have any recipes?
CHEESE AND EGG CASSEROLE
1 loaf sandwich bread
1 lb. mild cheddar cheese, grated
8 eggs
1 pt. milk
1 pt. Half & Half
1 tsp. salt
Dash of pepper
Dash of paprika
Prepare the day before serving. Grease a 9 x 1 inch casserole dish. Trim crusts from the bread and cube. Combine and beat eggs, milk, Half & Half, salt and pepper. Spread half the bread cubes over bottom of casserole, spread half the grated cheese over the bread. Layer remaining cubed bread, topped with remaining grated cheese. Slowly pour the egg mixture over the bread and cheese. Top with paprika. Cover and refrigerate overnight. Remove 1 hour before baking. Bake 1 hour at 350 degrees. Serve within 1/2 hour. Especially good for brunch. Served this at our last fashion show brunch. Serves 12.
OR
EGG AND CHEESE CASSEROLE
Bake at 350 degrees for 25 minutes. Mix together well:
8 eggs
1 pt. milk
1 tsp. salt
:
1/2 moon cheese (Cheddar), grated
1/2 to 3/4 loaf day old or older bread, remove crust, cube
Layer in 9 x 13 inch casserole, bread, eggs, cheese; repeat with cheese on top. Store in refrigerator for 24 hours; melt 1/3 stick of butter and drizzle on top.
OR
SWISS CHEESE AND EGG CASSEROLE
This method of preparing an egg casserole is exceptionally creamy and rich. 1 3/4 c. half and half 8 eggs, slightly beaten 2 tbsp. butter 1 tsp. seasoned salt 1/2 tsp. pepper 1 c. shredded Swiss cheese 8 slices bacon, cooked crisp & crumbled 1/2 c. fine dry bread crumbs (use crusts from bread) 2 tbsp. butter, melted
In a small bowl, combine bread cubes with half and half. Let soak five minutes. Drain liquid from bread cubes. Add to eggs. Beat well. Melt 2 tablespoons of butter in a heavy skillet. Add egg mixture. Softly scramble eggs over medium heat. When eggs are still soft but almost cooked through, add soaked bread cubes to eggs. Stir to combine. Sprinkle with seasoned salt and pepper. Pour egg mixture into a lightly greased oven proof casserole about 10" in diameter. Top with shredded cheese, crumbled bacon and dry bread crumbs. Drizzle with the melted butter. Bake at 400 degrees for 10 to 15 minutes, or until heated through and cheese is melted. Cut in squares to serve. Makes 8 servings.
OR
MACARONI, CHEESE AND EGG CASSEROLE
1 c. macaroni
2 c. milk
1 c. soft bread crumbs
2 tbsp. butter
2 tsp. onion, minced
2 tsp. parsley, minced
6 eggs, beaten
2 tsp. salt
2 c. American cheese, grated
Cook macaroni in boiling salted water until tender but firm. Mix together all ingredients except the bread crumbs. Put macaroni in buttered 2-quart casserole; pour mixed ingredients over macaroni and top with bread crumbs.
Bake in 325 degree oven, covered, approximately 1 1/2 hours. Cream of mushroom soup heated for sauce is good
OR
BAKED SAUSAGE, CHEESE, AND EGG
CASSEROLE
1 doz. eggs
12 tbsp. water
1/3 c. low fat milk
1 lb. bulk sausage meat
6 oz. grated, sharp Cheddar cheese
Spray Pyrex oblong pan with Pam. Brown sausage in fry pan. Break sausage up into small pieces. Drain sausage of all fat. Spread sausage in bottom of pan. Beat eggs in large bowl. Add water and milk. Grate cheese and put over sausage. Pour eggs over cheese and sausage. Bake at 350 degrees for 1/2 hour Done when eggs are firmly set.

How does Old Country Buffet manage to stay in business in the Midwest?
Check out the customers if you catch my drift. Granted the food is cheap but everything has a cost.
I figure they would have to be losing money based on the size of several of their customers.

Anyone know the recipe for the herb butter at old country buffet?
It is the whipped butter that has some sorts of herbs in it and it is so good. I don't need a recipe...but does anyone know what exactly is in it? Thanks.
My herb-butter is made by whipping butter (brought to roomteperature) with salt, pepper, lemonjuice, and chopped fresh herbs like parsley, lovage, majoram, and basil.
Chill for about an hour and shape into a roll, using bakingsheet. Chill the wrapped roll.
Cut into slices, when ready to serve.
